Vegan Butterscotch Cupcakes

Ingredients:

Brown sugar cupcakes

1 ¼ cups all-purpose flour

2 tablespoons cornstarch

¾ teaspoon baking powder

½ teaspoon bicarb soda

¼ teaspoon salt

½ cup softened vegan butter

¾ cup packed brown sugar

1 cup dairy-free milk of choice, divided

2 teaspoons vanilla extract

1 teaspoon apple cider vinegar or white vinegar

 Vanilla Buttercream

1 cup of softened vegan butter

3 ¾ cup icing sugar

¼ cup canned full fat coconut milk

1 tablespoon pure vanilla flavouring or extract

 Butterscotch sauce

¼ cup vegan butter

¾ cup packed brown sugar

¾ cup canned full fat coconut milk

2 ½ teaspoons vanilla extract

¼ teaspoon salt

Method:

 To make cupcakes

  1. Preheat oven to 180°C and line a muffin pan with cupcake liners.
  2. In a medium bowl, whisk together the flour, starch, baking powder, bicarb soda and salt.
  3. In a separate mixing bowl beat the vegan butter and brown sugar for approximately 2 minutes or until creamed.
  4. Add ½ cup of your chosen milk, vanilla, vinegar and around half of the flour mixture to the creamed butter and sugar. Beat on low to combine. Add the remaining milk and flour mixture and beat on low until combined.
  5. Divide the batter between the 12 cupcake liners. Bake for 20-22 minutes or until a toothpick inserted into the centre of a cupcake comes out clean. Remove the cupcakes from the pan and place on a cooling rack to cool completely before frosting.

To make vanilla buttercream

  1. Place the vegan butter in a mixing bowl and beat until creamy.
  2. Sift the icing sugar into the bowl 1 cup at a time, beating at a low speed to incorporate each addition. Add the vanilla, and slowly beat in the coconut milk until its reached a creamy consistency.

To make the butterscotch sauce

  1. Melt the vegan butter in a medium saucepan over medium heat.
  2. Whisk in the brown sugar and coconut milk and let it bubble for 5 minutes without stirring.
  3. Remove from heat and whisk in the vanilla and salt. Let cool to room temperature.

To decorate the cupcakes

  1. Frost the cooled cupcakes.
  2. Drizzle the butterscotch sauce over the top.
