Thai Green Fish Curry

Featuring fish, this six-ingredient Thai green curry is a quick and easy meal!

1 1/3 cups jasmine rice
2 teaspoons rice bran oil
2 tablespoons Thai green curry paste
270ml can coconut milk
500g basa fillets, cut into 2.5cm pieces
150g snow peas, trimmed
1/3 cup fresh coriander leaves
Cook rice in a saucepan of boiling, salted water, following packet directions, until tender. Drain. Cover to keep warm.

Meanwhile, heat a wok over medium heat. Add oil. Swirl to coat. Add curry paste. Stir fry for 30 seconds or until fragrant. Add coconut milk, bring to the boil. Add fish, cover, reduce heat to low. Simmer for 3 minutes or until just cooked through.

Add snow peas. Simmer for 2 minutes or until snow peas are bright green and tender. Serve curry with coriander and rice.
