8 x 100g steaks
salt and pepper
1-2 tablespoons olive oil
2 large onions, sliced thinly
20g butter, melted
8 good size pieces ciabatta bread, cut horizontally and grilled or toasted
¾ cup baba ganoush
1/2 cup hummus
1/2 green capsicum, sliced thinly
2-3 sprigs fresh mint, leaves picked and sliced
Pre-heat barbecue, flat grill or flat pan.
Using a meat mallet, beat steak until 2-3mm thick (sandwich size), season and rub with a little olive oil. Place on flat grill.
Place onions on flat grill and drizzle with a little oil and melted butter.
Meanwhile; spread the bottom half of the toasted ciabatta generously, with baba ganoush.
After about 1-2 minutes cooking, turn the steak and onions. Cook 1 further minute and place 2 pieces of steak on each ciabatta base.
Top steak with cooked onions, capsicum and mint. Spoon over some hummus.
Close the sandwich with the top piece of the ciabatta and cut in half. Serve.Print Recipe
