Smoked salmon, smashed avo & poached egg bagel

Ingredients

50g smoked salmon

1 bagel

1/2 avocado

1 egg

1/2 lemon

Pepper, to season



Method

Step 1

Poach egg in boiling water for 3-4 minutes. Toast bagel.

Step 2

Peel and smash avocado and apply to bagel with a squeeze of lemon juice.

Step 3

Lay smoked salmon slices over the smashed avocado and place a poached egg on top. Season with pepper to serve.
