Smoked Salmon Rice Paper Rolls
1 medium carrot
1 Lebanese cucumber, halved, seeded
16 x 16cm round rice paper sheets
16 slices smoked salmon
1 large avocado, sliced
4 green onions, sliced
½ cup sweet chilli sauce
¼ cup lime juice
2 tbsp chopped fresh coriander
2 tbsp chopped fresh mint
Cut carrot and cucumber into long thin strips. Place 1 sheet of rice paper in bowl of warm water until just softened; lift from water carefully, place on board.
Place slice of salmon, slice of avocado and a little of the carrot, cucumber and onion on one end of the sheet. Roll once, fold in sides, roll up to enclose filling.
Repeat with remaining rice paper, salmon, avocado, carrot, cucumber and onion.
Serve rolls with dipping sauce.
