Prawn Cocktail

Ingredients

1 avocado, halved, stone removed, peeled & coarsely chopped
1 Lebanese cucumber, finely chopped
1/2 small red onion, finely chopped
1/2 cup mayonnaise
1 tbs tomato sauce
2 tsp Worcestershire sauce
1 tbs lemon juice
6 drops Tabasco pepper sauce
8 iceberg lettuce leaves
24 cooked prawns, tail on
Lemon wedges, to serve

Method
Combine the avocado, cucumber and onion in a medium bowl. Whisk together the mayonnaise, tomato sauce, Worcestershire sauce, lemon juice and Tabasco in a bowl.

Line each serving glass with 1 lettuce leaf. Finely shred the remaining lettuce leaves and divide among the glasses. Top with the avocado mixture and prawns. Drizzle over the mayonnaise mixture. Serve with lemon wedges.
