Oven Baked Fish with Tomatoes



4 medium-firm fish fillets, such as hake
1 tbsp olive oil
1 brown onion, sliced
3 cloves garlic, sliced
2 capsicums, sliced
2 tbsps chopped fresh dill
1 punnet cherry tomatoes, washed and dried


1. Preheat the oven to 200 C. Spray a 17 x 27cm baking dish with vegetable oil. Season fish fillets with salt and pepper and put in a single layer in dish.

2. Heat a medium non-stick frying pan over medium-high heat. Add oil. Add onion and cook 5 min, or until soft. Add garlic and capsicum and cook for 2-3 min. Season with salt and pepper and stir through the dill and cherry tomatoes. Remove from heat.

3. Spoon capsicum mixture over the fish. Bake for 15 min, or until fish is cooked through and tomatoes are soft. Serve with green salad and couscous. Garnish with chopped parsley, if desired.
