Ham Reuben Sandwiches


1/3 cup whole egg mayonnaise

3 tablespoons tomato sauce

3 tablespoons finely chopped 

2 teaspoons lemon juice

8 slices sourdough

150g sliced cheese

250g sliced ham

250g sauerkraut, rinsed, squeezed dry

30g unsalted butter

1 tablespoon olive oil


  1. Mix mayonnaise, sauce, cornichons and juice, then spread on each bread slice.
  2. Top 4 slices with half the cheese, then ham, sauerkraut and remaining cheese. Top with bread sauce-side down.
  3. Heat butter and oil in a large non-stick pan over medium heat. cook sandwiches for 2-3 minutes on each side until bread is golden and cheese melts.
  4. Serve with a side of chips.
