Clam Chowder

20g butter
1 large onion, finely chopped
2 large potatoes, diced
225g diced bacon
500ml milk
250ml chicken stock
250ml cream
1 clove garlic, crushed
500g clams
2 tbsp chopped fresh parsley
Freshly ground black pepper

1. Melt butter in a large pan over medium heat. Add onion and cook until soft.

2. Add potatoes and bacon, cook, stirring over low heat for about 30 minutes until golden.

4. Stir in milk, stock, cream, garlic and clams. Simmer gently for 10 minutes. Stir in parsley. Season with pepper. Serve.
