Chilli Prawn Pasta


500g frozen prawns
2 red chillies, finely sliced
3 cloves of garlic, crushed
1 brown onion, finely diced
1 bunch of parsley, finely chopped
1 cup olive oil
1 cup of white wine
1 lemon
500g spaghetti or fettuccine
Salt and pepper to taste

Heat olive oil in a frypan, add one of the chillies, half of the parsley, the garlic and the cup of white wine. Bring to boil and simmer for a few minutes.

Place a large pot of hot water on the stove to boil. Add a pinch of salt, add pasta and cook until al dente.

Heat a small amount of olive oil in a frypan and brown the onion. Add the remaining chilli, prawns and add the prepared stock over the prawns. Once all the prawns have been cooked, drain the pasta, return to the pot and combine with the prawn sauce and remaining parsley. Combine together add a squeeze of lemon juice and serve.
