Chicken Caesar Salad



4 slices bread
2 tablespoons olive oil
4 bacon rashers, rind removed, sliced thinly
3 cups coarsely chopped cooked chicken
1 large cos lettuce, trimmed, torn
6 shallots, sliced thinly
1 cup flaked parmesan cheese
1 cup Masterfoods Caesar Dressing


Preheat the oven to 180°C.

Remove crusts from bread and discard, cut bread into 2cm squares; toss with oil in a medium bowl. Place bread on an oven tray; toast in oven, for about 10 minutes, stirring occasionally.

Cook bacon in a small frying pan, stirring, until browned and crisp. Drain on absorbent paper.

Combine half of the chicken, half of the bacon, half of the croutons and half of the Caesar Dressing in a large bowl with lettuce, half of the shallots and half of the cheese; toss to combine.

Divide salad among serving plates. Top with remaining chicken, bacon, croutons, onion and cheese; drizzle with remaining Caesar dressing.
