Chicken Breast Goujons Fried Rice


1 kg Chicken Breast Goujons
100 ml vegetable oil
5 eggs, cracked into a bowl and whisked lightly
30g ginger, grated
30g garlic, crushed
500g frozen mixed vegetables
1.2 kg cooked rice
100 ml soy sauce
200 ml sweet chilli sauce
5 spring onions, sliced


1. Cook Chicken Goujons as per pack instructions.
2. Heat half the oil in a wok or fry pan, add egg mix, stir rapidly until cooked, remove from pan and set aside.
3. Place wok/fry pan back onto stove, add the remaining oil and heat.
4. Add ginger, garlic and vegetables, stir fry for 2 minutes than add rice.
5. Season with soy sauce, place on to a plate and top with Chicken Goujons, garnish with sliced spring onion.
6. Drizzle with sweet chilli sauce.
