Beef and Kumara Curry
1 tbs vegetable oil
1 red onion, thinly sliced
600g diced beef topside
175g Countrywide Curry Sauce Mix
1 small kumara, peeled, chopped
Steamed rice and pappadams, to serve
Coriander sprigs and chopped peanuts, to garnish
Heat oil in a large heavy-based saucepan over medium heat. Add onion and cook, stirring, for 2-3 minutes until softened. Remove onions from pan. Brown beef in pan in 2 batches. Combine Countrywide Curry Sauce Mix with 1 L cold water, mix well to dissolve. Add to pan with prepared onions. Stir well to combine, then bring to the boil stirring continuously. Cover, reduce heat to low and cook for 40 minutes. Remove the lid, add the kumara and simmer, uncovered, for a further 10 minutes or until the kumara and meat are tender and the sauce has thickened.
Serve with rice and pappadams, garnish with coriander and peanuts.
Beef can be substituted for chicken, prawns, sausages or vegetables.
