Bacon Haloumi Bites
8 rashers of bacon, halved cross ways
2 tablespoons basil pesto
16 large fresh basil leaves
225g haloumi, cut into 16 pieces
1 tablespoon olive oil
1. Preheat oven to 220 degrees Celsius. Line a tray with baking paper.
2. Place 1 piece of bacon on a board. Spread with a little pesto. Place one basil leaf and a piece of haloumi at one end of the bacon. Roll up the bacon with the cheese and basil inside. Secure with a toothpick. Place on prepared tray. Repeat with the remainder of those ingredients. Drizzle with oil.
3. Bake for 20 minutes, brushing the bacon with pan juices half way through.
4. Stand for 5 minutes, serve.Print Recipe
